ZUCCHINI CHIP NACHOS

Ingredients:

  • 3 Zucchinis
  • Reduced Fat Shredded Cheddar Cheese
  • 8 ounces Ground Chicken or Turkey Breast
  • Light Sour Cream
  • Hot Sauce
  • Shredded Lettuce
  • Fresh Salsa/Guacamole (optional additions)
  • Baking Sheet(s)
  • Olive Oil Cooking Spray
  • Frying Pan

Directions:

  1. Preheat oven to 425.
  2. Slice zucchini into thin chips.
  3. Line baking sheets with aluminum foil and spray with Olive Oil.
  4. Cover trays with zucchini chips. Do not overlap zucchini.
  5. Bake until fully cooked, then flip and broil until crispy!!!* Cooking times vary depending on chip slice width and ovens. Unfortunately you will have to watch them ;).
  6. Spray frying pan with olive oil and brown meat on medium high. Finely chop and add hot sauce (optional).
  7. Combine chips on one baking and sheet layer with cheese and meat.
  8. Turn off oven and let sit until cheese melted. Oven will already be hot!
  9. Top with lettuce, salsa, guacamole, and sour cream.

MAPLE SUGAR ACORN SQUASH

Ingredients:

  • 1 ½ cups of Water
  • 2 tsp Butter
  • 1 tsp Cinnamon
  • ½ tsp Ginger
  • 1/3 cup Pure Maple Syrup
  • 1 Acorn Squash
  • Glass Baking Dish

Directions:

  1. Preheat oven to 400 degrees.
  2. Rinse squash, cut in half, and scoop seeds.
  3. Place face down in 1½ cups of water
  4. Bake for 40 minutes.
  5. Combine butter, cinnamon, ginger, and pure maple syrup in a small bowl.
  6. Remove from oven, drain water, and flip squash.
  7. Pour combined ingredients into the center of each half, dividing them evenly.
  8. Bake 10 minutes.

PARMESAN CAULIFLOWER BITES

Ingredients:

  • 1 head of Organic Cauliflower
  • 3 eggs
  • ½ cup Grated Parmesan Cheese
  • ¼ cup Mrs. Dash Garlic and Herb Seasoning
  • Baking Sheet

Directions:

  1. Preheat oven to 350 degrees.
  2. Spray Baking Sheet with Olive Oil spray.
  3. Cut cauliflower into florets (cut off stems). In a small bowl mix eggs.
  4. On a flat surface combine Parmesan and Garlic Herb Seasoning.
  5. Dip florets in egg and roll in Parmesan Seasoning.
  6. Place on baking sheet and bake for 15-20 minutes.

ROSEMARY ROASTED POTATOES

Ingredients:

  • 1 lb Red Potatoes
  • 2 tbs Olive Oil
  • ½ tsp Sea Salt
  • ¼ tsp Fresh Ground Pepper
  • ¼ tsp chopped Garlic
  • 1 tbs Fresh Rosemary Leaves (if possible, otherwise use dried rosemary )
  • Olive Oil Spray
  • Directions:

    1. Preheat oven to 400 degrees.
    2. Rinse and cut potatoes into quarters.
    3. In a bowl combine, potatoes, olives oil, rosemary, salt/pepper, and garlic, and toss.
    4. Spray baking dish with olive oil and pour in potatoes.
    5. Bake for 45 minutes. Stir/flip after 30 minutes*
    6. Broil for an extra 5-10 minutes on high if you like them crispy like me 🙂

    CLEAN CHILI TURKEY BURGERS

    Turkey Burgers Ingredients:

    • 1 LB of lean ground turkey
    • onion powder
    • garlic powder
    • paprika
    • cumin
    • chili powder

    Directions: Combine meat and 1/4 tsp of each seasoning in a large bowl. Form into 4-5 patties and grill until desired.

    Chili Ingredients:

    • 24 ounce can of crushed tomatoes
    • minced garlic
    • 1 can of cannellini beans
    • 1 can of kidney beans
    • onion
    • 2 cups of water
    • paprika
    • cumin
    • chili powder
    • black pepper
    • EVOO
    • reduced fat mexican cheese mix

    Directions:

    1. Sautee 1/4-1/2 cup of onion and 1 tbs of EVOO until brown.
    2. Add 2 cups of water, tbs of garlic, and crushed tomatoes.
    3. Rinse and crush beans, then add to the pot, along with tsp of cumin, paprika, and black pepper. Add 2 tbs of chili powder,
    4. Bring to a boil and then let simmer on low for 25 minutes.

    Chili Burger Directions:

    Pour chili over burger and top with 2 tbs of cheese.
